Not really Melbourne, but the Kilmore and Heathcote have great country-style bakeries with a lot of tasty-looking pies and pastries.
I love the Flying Tart bakery in Pheasant Creek, just before Kinglake coming from Whittlesea.
There is a place in Toorak...I think it is called Browns Bakery. Nice little place.
Browns is no longer there. (unfortunately!)

Degani Bakery on Station Street in Fairfield is fantastic
A1 Bakery in Brunswick and another branch in Dandenong. They serve the freshest pita breads and their baklava is amazing.
